3M's Week Two Tailgate Fare

As you’ll be able to tell, we enjoy straying from the typical burgers, brats, and wings for our tailgating fare.  This week, Mrs 3M chose chicken tacos, which we’ll be serving in our spread Saturday.  They’re very easy to make, and are a very versatile dish.  You can serve them in fajita-sized tortilla shells, in a rice bowl, over some lettuce for a great taco salad, make a plate of nachos, or even eat it alone out of a bowl.  Each of these options are pretty simple at a tailgate, because you can do all the prep and cooking at home, then simply transport your food and enjoy.

Ingredients:

1 lb chicken breast
2 packages of taco seasoning (mild, medium, hot – your choice)
1 can Rotel
1 can black beans (drained)
1 cup frozen corn (we use an entire bag)
1 can chicken broth

Preparation:

Lay the chicken breasts in the bottom of the crock pot, and top with the items.  Just dump it all in there and mix a little to get the taco seasoning blended. Cook on low for 8 hours.  After cooking, simply use two meat forks to shred the chicken, and mix it all back in there.  We let it sit for a little while on warm, just to let the flavor set in to the shredded chicken.

Serve it in any way you desire, and don’t forget to top it off with cheese, sour cream, salsa, pico, hot sauce, or guacamole.

Tip: Crock pot liners are your best friend, if you use it for a tailgate, because of how long it will sit there after use.  If you use them with this recipe, make sure you don’t tear the liner when you’re shredding the chicken.

Variations

We double the recipe, and it all fits nicely into a standard 6-qt crockpot. You can also increase the chicken by 1/2 to 1 lb without increasing the other ingredients. Also, we use two packets of hot taco seasoning, as well as two packets of mild, just to set off the flavor.  When you double the chicken broth, it will make it “wet”, so make sure you have plenty of napkins if you’re eating it on a tortilla shell.
