2022 Tailgate Fare - Week One: Bacon Wrapped Potato Bites

Good morning Dubbers, and welcome to another season of TGF!  This is going to be the seventh season of tasty treats, I hope everyone enjoys it.

After a disappointing campaign last season, we finally get to see the Bucks back in action, and it's going to be a banger! We get a new DC, more weapons on offense, a team with unlimited potential, and it's a night game against one of the most storied programs in college football history.  

Bottom line up front - Bucks cover, now let's get to the food.

Mrs. 3M and I found some outstanding recipes to share this season, as did Rox and Chief.  We're looking forward to collaborating for another great year.  Week one is always tough, because you want to come out of the gate strong.  And, this one is as delicious as it is simple.

Bacon Wrapped Potato Bites

Ingredients

  • One pound very small new potatoes
  • Olive Oil
  • Lemon Pepper Seasoning
  • One pound thin cut bacon
  • BBQ Sauce or dips of your choosing

Directions

  • Preheat oven to 350.
  • Scrub potatoes and cut each in half.
  • In a small bowl, toss the potatoes with just a bit of olive oil and generously season with lemon pepper.
  • Cut bacon slices into halves or thirds (figure out the right size for your potatoes…the bacon must wrap around the potato piece and can just meet, or slightly overlap, on the bottom).
  • Wrap each potato with a piece of bacon, and place them flat size down, bacon ends tucked under, on a rimmed baking sheet.
  • Bake for 45 to 60 minutes, or until potatoes are tender and bacon is golden.
  • Remove immediately from baking sheet and cool on a wire rack or paper towels. 
  • Serve hot or warm with barbecue sauce for dipping.

Pro Tips

  • If you let the potatoes cool on the baking sheet, they will adsorb all of the fat (grease) that has been rendered from the bacon.
  • You can use a toothpick to skewer them during prep, but they will stay together well if you place the ends of the bacon down on the backing sheet.
