Good morning Dubbers, and welcome to still-not-a-rivalry week.
Saturday's primetime matchup between Illinois and Penn State at the Big House escaped the big noon time slot, so we all have extra time to prepare for some elite competition in front of an epic sea of scarlet.
This week comes with some extra baggage as we're all enthralled by the rumors swirling about regarding James Franklin, his agent, and alleged flirtations with Los Angeles and Baton Rouge. Well, maybe enthralled was an over-statement, because most of us really don't care. You know, because, still not our rival.
OK, so now that we've established that James Franklin is a special, special man, we're going to get after some delicious food, but we're keeping it topical to the matter at hand - our visitors from Pennsylvania. We'd hate for them to feel unwelcome...
Philly Cheesesteak Dip
Ingredients
- 1 1/2 cups grilled, thin cut steak- such as flank or strip- chopped
- 2 tbsp olive oil
- 1 cup diced white onion
- 1 cup diced green pepper
- 8 oz cream cheese, softened
- 1/2 cup mayonnaise
- 4 oz chopped provolone cheese
Directions
- In a medium sized skillet, heat the olive oil over medium high heat. Add the onions & peppers, and cook- stirring occasionally- until sautéed. Set aside.
- In a medium mixing bowl, stir together the cream cheese, mayonnaise, cheese, and steak until evenly combined.
- Add the cheese mixture to the skillet, stirring to incorporate the sautéed peppers and onions.
- Bake the Philly cheesesteak dip at 350 degrees for 20-25 minutes. Remove from the oven, and serve immediately with toast, chips, sliced baguettes, or even pita chips.

- Mrs 3M just made toast and cut the bread into squares for easy bitesize dipping.
- The smaller you cut the steak and peppers, the more manageable the dip is.
- You can ask your butcher's counter to slice the steak for you into thin strips.
- Mrs 3M sometimes transfers dips, such as this, to a crockpot on the warm, or lo, setting for extended feasting. We typically break out one of these three-pot warmers for the gameday spread.
